Let’s Cook!
- Meatball Ingredients
1 pound of ground turkey/chicken/beef
1/2 cup Italian panko style breadcrumbs
1/4 cup grated parmesan cheese
1 egg
Season with your heart: Salt, Pep, Garlic, Onion, Italian, Paprika, Red Pepper Flakes
- Vodka Sauce Ingredients
1 tablespoon olive oil
1 large shallot/ 1/2 red onion
4-5 cloves fresh garlic
2-3 tablespoons tomato paste
2 tablespoons vodka (optional)
1 can coconut milk (trust me)
2 teaspoons cornstarch
1 cup pasta water
1-2 tablespoons butter
1/4 cup grated parmesan cheese
Season with your heart: Salt, Pep, Garlic, Onion, Italian, Red Pepper Flakes
Directions
- Chop shallot and mince garlic – set aside
- In a large mixing bowl, add all the meatball ingredients and combine with your hands (don’t be shy!)
- Roll into 1-inch balls. (Tip: slightly wet hands make this easier) – air fry or bake at 385° for 14-16 minutes
- Warm up olive oil in a medium sauce pan
- Once hot, add in chopped shallot – cook until translucent
- Add in garlic, cook until fragrant & add in tomato paste
- Cook mixture until tomato paste is a rich red color. While the mixture is cooking, add in all the seasonings to blossom (we will add more later)
- Deglaze the pan with vodka (or not, up to you)
- If you skipped the vodka, add in 2-3 tablespoons of pasta water to thin out the mixture
- Take 2-3 tablespoons of coconut milk and add cornstarch to create a slurry (this will thicken up the sauce)
- Alternate adding coconut milk and pasta water until you have your desired amount and color.
- If the sauce needs to be thickened, create another slurry and add it in
- Lastly, re-season the sauce and add both the butter & parm!
- Voila – you just made the best & easiest Vodka Sauce!
