Spring has always been my favorite time of year because it feels like a chance to start fresh (anddd I’m an April baby). After what felt like an endless winter here in New York, it’s time to open the windows, make those brunch plans, and rethink our closets. A spring refresh for your top drawer is definitely overlooked, but it’s one of my favorite parts of the Spring & Summer seasons. Think bralettes, all lace panties, and satin PJ sets…
We start caring about the little things again—what we’re wearing, what we’re eating, how we’re spending our mornings. Maybe you’ve been in hibernation mode for the past few months, reaching for cozy sweats and comfort food a.k.a homemade vodka sauce. Same. But now? Now we’re waking up, we’re stepping into the sun, and we’re making breakfast that actually makes us feel good.

Why Homemade is better than Store-bought
I used to think homemade granola was some elaborate, crunchy-girl thing that required way too much effort. My thoughts actually went something like…why would I ever make an item I can buy at the store?
But then I actually made it, and wow—not only is it super easy, but it also makes your kitchen smell like heaven and tastes 100x better than the overpriced, sugar-loaded stuff at the store. Plus, you get to control exactly what’s in it (no weird preservatives, no extra fillers, just the good stuff). I know, who is she?

Light, Crisp & Golden: The Perfect Spring Granola

minutesA crispy, golden homemade granola that’s lightly sweetened, perfectly crunchy, and effortlessly chic. Made with simple, wholesome ingredients, it’s the perfect topper for yogurt, smoothie bowls, or just by the handful. Because your breakfast deserves a glow-up too.
Ingredients
3 cups old-fashioned rolled oats
1 cup nuts (almonds, pecans, or walnuts—pick your favorite!)
½ cup seeds (pumpkin seeds, sunflower seeds, or chia seeds – I recommend chia + one other)
½ cup shredded coconut (optional)
1 teaspoon cinnamon
¼ teaspoon salt
⅓ cup maple syrup or honey
⅓ cup melted coconut oil
1 teaspoon vanilla extract
½ cup dried fruit (optional, but my favorites are cranberries, raisins, or chopped apricots)
Directions
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- Mix oats, nuts, seeds, shredded coconut, cinnamon, and salt in a large bowl.
- Whisk together maple syrup (or honey), coconut oil, and vanilla. Pour over the dry ingredients and stir until evenly coated.
- Spread the granola mixture on the baking sheet, keeping it in an even layer (don’t spread it too thin if you love big clusters!).
- Bake for 25-30 minutes It’s ready when golden brown—don’t overbake! (I often do and it’s still delicious)
- Let it cool completely before breaking it into clusters. Stir in dried fruit at the end.
How to Store Granola for Maximum Freshness
Once cooled, store your homemade granola in an airtight container at room temperature. It stays fresh for up to 2 weeks—but let’s be honest, you’ll probably finish it before then.
Ways to Enjoy Your Granola:
- With Greek yogurt and fresh berries for a protein-packed breakfast (my fav!! 😋)
- Sprinkled over oatmeal for extra crunch
- As a topping for smoothie bowls
- Straight out of the jar as a quick, healthy snack
